Za’atar Crusted Halibut for Two
2 halibut steaks approx. 1″ thick ( 3/4 lb)
1 lemon
2 tsp. Za’atar **
1/4 tsp. Red chili flakes
1/2 tsp. Coarse salt, kosher salt, sea salt
1 tsp. Olive oil
Oven method, move rack to upper 1/3 of the oven, preheat to 450 degrees F.
Place a cake rack, broiling rack over a rimmed sheet.
Brush both sides of the fillets with olive oil and place on rack.
In a small bowl mix the Za’atar, red pepper flakes to taste, zest of about 1/2 the lemon, and salt.
Pat this evenly over one side of the fish.
Roast until fish is cooked through, depending on the thickness of the fillets (6-9 min)
Squeeze a little lemon over & serve with lemon wedges
Serve with couscous and a salad of field greens or roasted asparagus
A quick way to change up couscous is to replace 1/2 the liquid in the package directions with tomato juice or snappy tom, and a pinch of what ever herb or spices you are using in the entree protein.
