
Ingredients:
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon kosher salt
- 1 tablespoon matcha powder*
- 1/2 cup granulated sugar
- 1 1/3 cups buttermilk**
- 1 large egg
- 1/3 cup neutral oil (vegetable oil)
- 1 1/2 teaspoons vanilla extract
- 1 cup white chocolate chips
Instructions:
Preheat oven to 400°
Spray muffin tin with bakers spray or non stick spray
In a large bowl, whisk together the flour, baking powder, baking soda, salt, matcha powder and sugar.
In a separate bowl, whisk together the buttermilk, egg, oil and vanilla. Add the wet ingredients into the dry ingredients and stir to combine. Fold in the white chocolate chips. Spoon the batter into the muffin cups.
bake for 16-18 minutes, until the tops are lightly browned. Let cool slightly in the pan and then transfer to a wire rack to cool completely.
- High quality Matcha powder and flavored Matcha powder are available in my tea shop. The banana would be yummy.
- * I keep organic Buttermilk Powder on hand for baking. I mix it per package instructions with water to substitute fresh buttermilk
