Matcha Booster Banana Muffins
Preheat oven to 350F, 325F with fan assist (convection)
Spray a 12 muffin baking tin with cooking spray, or line with paper liners
In a mixing bowl, sift or mix together:
1 cup all purpose flour
1/2 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon banana matcha green tea powder, Or regular matcha powder**
In a separate bowl beat together:
3 very ripe medium bananas, riper the better
3/4 cup sugar
1/3 cup liquid coconut oil
1 large egg
Slowly mix the dry ingredients into the wet ingredients, until just incorporated. Scoop into muffin tins. Bake approximately 15-20 minutes until golden and top springs back when gently pressed. Cool on a wire rack.
