Easy recipe to make the best of a bounty of summer fruit.
Preheat oven to 350 degrees F
Filling:
Approx. 4 cups of fresh fruit of choice, blackberries, peaches, mixed berries
1/4 – 1/3 cup sugar, depending on the tartness of the fruit
1 Tablespoon cornstarch
Mix together then place in the bottom of a glass baking dish, the fruit would come at least 1/2 way to 3/4 way up the sides of the container.
Topping:
Easy work in a small food processor, but can be done by hand with a fork or pastry cutter.
1/2 cup old fashioned rolled oats
1/2 cup packed brown sugar
1/2 cup all purpose flour
Pinch of salt
Cinnamon to taste – 1/2 tsp.
6 Tablespoons of cold butter cut into chunks.
Pulse this until the butter is cut into the dry ingredients, like coarse wet sand.
Sprinkle the topping evenly over the fruit. Bake in center rack of oven at 350 for 25-35 minutes, until the fruit is bubbling vigorously at the sides and the top is golden.
let cool to set, but serve warm. Enjoy!
