
1 pan, single batch, recipe can be doubled.
preheat oven to 300° F
in a stand mixer with paddle attachment, cream 1 cube (1/2 cup) room temperature butter with 1/4 cup granulated sugar.
scrape down the sides with a spatula and add 3 TB corn starch, 1/2 tsp vanilla, tiny pinch of salt, and 1 1/4 cup all purpose flour. Mix until incorporated.
scrape into an 8” pan with removable sides or add parchment paper to the bottom of a 8×8 baking dish.
flatten the dough out evenly into the bottom of the pan.
use a fork to prick a decorative pattern in the dough.
Bake 300° For 45 minutes or until just lightly golden around the edges, do not overbake.
While warm, sprinkle top with a little more granulated sugar. When slightly cool enough to handle, lift out of the pan and cut into wedges.
finish cooling on a wire rack, store in a sealed container.
