
Preheat oven to 350°
Ingredients
- 5 Tbl. Unsalted butter
- 1 Cup all purpose flour
- 1 Cup shredded Parmesan cheese
- 1 egg
- 1 tsp mixed peppercorns roughly crushed in a mortar
- 1 tsp Seasoning of your choice (Za’atar, Dukkah, Sesame seeds, Poppy seeds)
- Pinch of salt (depending if you use salted or unsalted butter, you might want to lightly add finishing salt to the top of the crackers)
Preheat the oven to 350°F (175°C). In the bowl of a food processor, or stand mixer with paddle attachment, add the flour, Parmesan cheese, butter, pepper, and spice/herb of choice. Mix until ingredients resemble fine sand. Add the egg and mix until the dough starts to come together into a ball.
Remove from mixer, gather into a ball and cut into 2 portions.
Roll one portion between 2 sheets of parchment paper until as thin as you can get it approx. 1/16th inch. Take off top sheet of parchment. Using a knife or pizza wheel cut into wide strips. Place on a silpat or lift the parchment paper onto a baking sheet. Bake 13-15 minutes until evenly browned. Remove to a wire rack to cool. Continue with 2nd portion of dough.

When cooled, break into uneven cracker bread pieces.
