The bouquet garni is a lovely French invention to flavor clear stocks, soups, aspics. It works well in nearly all soups, stews, and sauces. Our bouquet garni is a muslin pouch of bay leaves, parsley, thyme sprigs, and tellicherry peppercorns, tied up with a string to drop over the side of a stock pot and easily retrieved.
